Turkey legs in red wine sauce
2 shallots
1 carrot
1 tbs butter
1 tbs olive oil
3 turkey legs (about 3 pounds)
3 tbs flour
1 bottle red wine
Salt to taste
½ tsp pepper
1 bay leaf
1 tsp thyme
Mince shallots and carrots.
Heat butter and oil in a dutch oven.
Brown turkey legs and remove.
Add shallots and carrots and cook over low heat until soft, about 3 minutes.
Stir in flour and cook until brown, about 3 minutes
Add wine gradually , stirring
Add remaining ingredients and turkey legs, cover and simmer until very tender , about 1 ½ hours. If liquid has not reduced to the thickness of the gravy, uncover for the last 15-30 minutes of cooking.
